Assistant Kitchen Manager – Malta

Ceek Talent is partnering with a well-established organisation to recruit an Assistant Kitchen Manager who will support the smooth day-to-day running of kitchen operations. Working closely with the Kitchen Manager, you will play a hands-on role in ensuring food quality, operational efficiency, and team performance while maintaining the highest brand standards.
What is expected of you?
- Support the Kitchen Manager in overseeing daily back-of-house operations
- Supervise food preparation, kitchen activities, stock control, and supplier deliveries
- Ensure all incoming goods meet quality standards and match purchase orders
- Monitor food preparation and portioning to ensure strict adherence to recipes and brand standards
- Control food costs by managing portion sizes, reducing waste, and supporting cost planning
- Supervise kitchen staff to ensure cleanliness, hygiene, and compliance with food safety regulations
- Oversee proper storage, labelling, and stock rotation in fridges and storage areas
- Ensure all kitchen documentation (temperature logs, line checks, kitchen diaries) is completed accurately
- Assist in training, onboarding, and developing kitchen team members
- Support performance management and provide feedback on team performance
- Ensure staff productivity aligns with schedules and labour budgets
- Maintain a positive, safe, and efficient working environment
- Monitor operational and financial KPIs and react accordingly
What are you expected to bring?
- Proven experience in a supervisory kitchen role within hospitality
- Strong understanding of food preparation, kitchen operations, and food safety standards
- Experience in stock control, ordering, and supplier coordination
- Good financial awareness, including cost control and waste management
- Strong leadership and team management skills
- Ability to work under pressure in a fast-paced environment
- Excellent organisational and multitasking abilities
- Strong communication skills and a proactive attitude
- Flexibility to work shifts as required
- Fluency in English; additional languages are an asset
